Potato Pancakes
Crispy, wrung-out potato pancakes with apple sauce and sour cream — latkes, eyeballed.

What you'll need: A clean cloth and a frying pan… also:
- 1. Grate the potatoes and onions. Wring out as much water as you can in the cloth.
- 2. Mix with the eggs, starch, salt and pepper. Let sit 5 minutes.
- 3. Shallow fry in vegetable oil on medium heat until golden brown on one side. Flip and repeat.
- 4. Drain on paper towels. Serve with apple sauce and sour cream.
